Recipe Week - Surprise Fruit Salad

Here is a recipe extraordinaire!! (I must give credit to my pal Laura for this one). It was served for the first time at my annual CHRISTMAS IS FOR CHICKS, CHOCOLATE & CHAMPAGNE PARTY this past December.

SURPRISE FRUIT SALAD

Ingredients:
3 different types of apple (sweet, sour, tart)
cored and cut into small bite size pieces
1 tub of cool whip, softened
3 large snickers bars, cut into small bite sized pieces

Preparation:
Toss all ingredients into a crystal bowl and use your hands to really mix everything up so the apple and chocolate bits are totally covered in cool whip. Lick your fingers to sample the results.

Serve this SURPRISE FRUIT SALAD chilled with PEACH CHAMPAGNE.

Great as an appetizer or dessert... or both!!!

Recipe Week - A Holiday Trio

This trio is a favorite every year at our house...
The holidays just wouldn't be the same without them!

Halloween
Mummy Toes

Ingredients:
2 cans of refridgerated cresent roll dough (8 per can)
1 16oz package of cocktail smokies
1 pkg almond slices (in the baking isle at Walmart)
ketchup

Preparation & Baking Instructions:
Preheat oven to 350 degrees. Open can of cresent roll and unroll the dough. Place one triangular piece of cresent roll on a baking sheet or cooking stone.

Put a cocktail weenie in the wide end of the dough triangle; roll the dough around the sausage (you should have one layer of dough covering it completely - leaving the 'toe' end exposed). Taper the other end to look realistic at the base of the toe. Use a knife to score 'knuckles' on the dough in the center.

Place the toes in the oven and bake for 15-20 minutes or until golden brown. After baking, add a dab of ketchup at the exposed end of the toe and press an almond slice onto the ketcup for the nail.

Thanksgiving
Mr. President's Sweet Potatoes

Ingredients:
3 cups sweet potatoes
(4 sweet potatoes/peeled, cubed, boiled, and mashed)
1/4 - 1/2 cup of sugar
1 tablespoon of vanilla
1/4 cup butter (softened)

Directions:
Mix together and pour into greased pan, set aside.

Topping:
1 cup brown sugar
1/3 cup flour
3/4 cup chopped pecans
1/3 cup butter (softened)

Mix together and sprinkle over the top of the entire pan.
Bake at 350 for 30 minutes.

Christmas
Puttin' on the Christmas Ritz!

Ingredients:
Ritz crackers
Peanut Butter
Almond Bark
Chocolate Bark

Directions:
Sandwich the peanut butter between two Ritz crackers.

Melt the chocolate bark for 90 seconds (or longer to melt throughout). Dip each sandwich cracker into the melted chocolate half way and lay on to wax paper to cool.

When the chocolate has hardened, melt the vanilla bark and dip the opposite side, laying the cookies back on the wax paper to cool.

Recipe Week - Spaghetti Squash

Spaghetti Squash
For a serving of 3 to 4 people

Ingredients:
1 spaghetti squash
1 stick butter or margarine
1 tbsp minced roasted garlic
1 tsp. regular minced garlic
1/2 pint heavy cream
8 oz. shredded parmeasan cheese

Directions:
Cut squash in half from stem to bottom. Deseed. Place squash cut side down on pan and bake at 350 for 35 minutes or until outer edge is soft to the touch. Let cool. Use fork to scrape squash from shell.

Creating the Sauce:
Saute regular garlic in 1/4 stick margarine. Add cream and cheese. Add salt and pepper to taste. In another pan, saute roasted garlic, and remaining butter. Add spaghetti squash to this mixture of roasted garlic. Saute in pan and occasionally mix squash to cook more evenly. Then add cream and cheese mixture to roasted garlic and squash. Add more salt & pepper if needed. Serve.

Note: You can add fresh diced tomatoes and parsley for garnish and color. Toss this in at the end prior to seving.

Contest #2 - FINAL Challenge

"The Perfect Dinner Party"

Attention Contest 2 participants...
The final leg of the contest has begun!!

Rules:
You are the host and Chef of "The Perfect Dinner Party". You pick four well known people (can be anybody, living or not - could be writers, actors, politicians, sports people, astronauts, statesmen, whoever that would make up the perfect dinner party).

You are preparing the 4 course dinner and will submit the menu and one recipe as part of the contest. The menu should have something to do with each of your dinner guests. Submit your dinner guests names and their conversation as a script, (i.e., Henry Kissinger replied "blah, blah, blah" to Suzanne Sommer's poignant question) . Each person should say at least 4 things.

"The Perfect Dinner Party" guests should be chosen to ensure an interesting and/or funny dinner conversation. So, submit a 4 course dinner menu (with one recipe), names of guests, and their conversation as a script.

Deadline is Sunday, Sept 6th, 9:00pm (EST)

You will be judged on a number of factors including:
Best Menu
Best Recipe
Most interesting or funny Guest List
Most Probable, interesting, or funniest Script

You will be awarded a score between 1 and 20 if you participate.

This is a great chance to take home the prize.
